World cuisine · Spices · Lyon
Born from a meeting in New Zealand, Accentué is the project of two passionate individuals: Ashwin, a globetrotting chef steeped in Asian influences, and Jennifer, hospitality expert. Together, they chose Lyon to open a restaurant where spices become a language, an emotion, a journey.
A story that begins on the other side of the world
It all starts in New Zealand, In Wellington, Ashwin, originally from India, learned to cook and absorbed the pervasive Asian influences in the region. It was there that he met Jennifer, who would become his life partner… and later, his business partner.«"Together, their shared and complementary passions for cooking and hospitality take on a new dimension."»After ten years of experience, they decided it was time: to open their own restaurant, a place that reflects who they are, a place where they cook with heart and welcome with generosity.

Spices are not there to mask, but to reveal. Pepper, nutmeg, cloves, cinnamon… so many treasures that are part of French tradition as much as of world cuisines. What is a spice? An invitation to travel
Spices come from the most aromatic parts of plants: seeds, roots, fruits, flowers, bark… They are at the heart of the great trade routes of yesterday and today, and constitute the soul of many culinary traditions. At Accentué, they are worked with delicacy: no fire, no harshness, but a build-up of flavors, a depth, an emotion.
