The spirit: the temple of Lyon's conviviality Operating since the late 19th century, "Les Fédés" is undoubtedly one of the city's most famous bouchons (traditional Lyonnais restaurants). Here, the decor is a work of folk art: wood paneling, antique tiles, period photographs, and rows of dried sausages hanging overhead. The atmosphere is intentionally joyful and theatrical, thanks to a team that loves to tease customers and spread good cheer.
On the food front: a gargantuan ritual with a fixed menu The Café des Fédérations is renowned for its complete traditional menu that leaves no one hungry:
- The festival of entries: The table is immediately covered with delicacies — caviar from Croix-Rousse (lentils with bacon), a bowl of snout, cracklings, hot black pudding and homemade terrine as much as you want.
- Signature dishes: pike quenelle with Nantua sauce, black pudding with apples, AAAAA andouillette, or the famous tripe.
- The cheese platter: served with a ladle, accompanied by an essential fresh cervelle de Canut and aged Saint-Marcellin cheese.
- Traditional desserts: Pink praline tart, plums in wine or homemade floating island.
On the glass: Beaujolais takes center stage. As in any traditional Lyonnais bistro, the wine flows from a carafe. The establishment gives pride of place to Beaujolais (Morgon, Fleurie, Brouilly) and Côtes-du-Rhône, perfectly suited to wash down the richness of the meal.
