In Lyon, you don't really know someone until you've eaten with them. And for purists, this meal is taken at 9 a.m.. Welcome to the Francs-Mâchons, the philanthropic society that has been defending the true since 1964 Lyonnais mâchon.
What is the Lyonnais mâchon?
Direct inheritance from Canuts (silk workers), the mâchon is the convivial morning meal eaten after the first hours of work. Far from the coffee and croissant, it consists of hot dishes (tripe, tripe, hot sausage) and local cheeses, all washed down with pots of Beaujolais or Mâconnais.
The Francs-Mâchons: Guardians of Tradition
Founded at the instigation of Louis Javogues, this association of "bon vivants" selects the best bouchons (traditional Lyonnais restaurants). Every month, they meet to sample the "delicious" food of a chosen establishment.
